OCTOBER 2006 — Move over wine, cheese has got a new friend in town. Recognizing the growing popularity for pairing fine cheeses with beer, Cabot Creamery and the Harpoon Brewery have come together to create a unique flavor of cheese, Cabot Harpoon IPA Beer Cheddar.  Now New England’s love of cheese and beer can be enjoyed like never before.
 

“The creamy textured blend of our award-winning cheddar and the distinctive hop flavor of Harpoon IPA is our most innovative combination to date” says Rich Stammer, President and CEO of Cabot Creamery.

 

The cheese producers at Cabot worked months to perfect the process for the Harpoon IPA Cheddar.  The IPA style, which stands for India Pale Ale, is traditionally a hoppy, medium-bodied beer.  Cheddar blocks 10-30 days old are cut into the desired size depending on their final destination.  Stored in the cooler, they are then stacked and soaked in Harpoon IPA for 24 hours to ensure that the beer covers each layer of cheese.  The cheese is then drained, packaged, and stored at 45ºF for 4 weeks.  After 4 weeks the cheese is graded and ready for shipping to consumers.
